Drive south on I-35 from Alvarado and you will pass a brand new drive-thru line stretching along the frontage road at exit 368A. Turn off the interstate, follow Waco Street four blocks west, and you will find a completely different Hillsboro: a limestone courthouse, a Saturday market, an art gallery inside an old pharmacy, and a distillery two doors down from a burger joint that used to be the Cotton Exchange.
Both places are ours. But if you already live in Hill County, you have probably figured out that the interstate is where you fuel up and the square is where you actually spend a weekend. This July, the gap between those two Hillsboros widened in a useful way, and the next six weekends are worth planning around.
The newest opening is on I-35, but the center of gravity has not moved
Chick-fil-A Hillsboro opened its doors on Thursday, July 16, 2026 at 6:00 a.m. It sits at 250 I-35 Service Road with an owner-operator, Gabrielle "Gabbie" Baez, running the floor. Hours are Monday through Saturday, 6:00 a.m. to 9:00 p.m. inside and until 10:00 p.m. in the drive-thru, and the location added roughly 80 full- and part-time jobs to Hill County. Local reporting from KXXV pegged it as a $4.5 million investment in the area, tied to a wave of new business interest along the corridor.
That is real money and it is real convenience, especially if you commute up to Alvarado or down to Waco. What it is not is a reason to skip the square. The Hillsboro that shows up on out-of-towners' cameras, the one that the Texas Historical Commission named one of the first "Main Street" cities back in 1981, is still the same four walkable blocks bounded by Covington, Franklin, Elm, and Waco Street. That is where a summer weekend earns its keep.
A Saturday, by the clock
Here is the sequence that works from May through October. Nothing here is invented; it is what is actually happening between 8 a.m. and midnight on a Hillsboro Saturday right now.
- 8:00 to 10:00 a.m. — Farmers Market on the courthouse square. The Hillsboro Farmers Market runs Saturdays 8 a.m. to 1 p.m., May through October. Go early, before the shade off the courthouse retreats.
- 10:00 to 11:30 a.m. — Coffee and a gallery loop. Cross Elm to Overflow Coffee & Café at 60 W Elm St. The building was the longest running pharmacy in Texas before it was restored, and Overflow shares the space with the Bond Emporium, a booth-format gallery of art, chocolates, leather goods, and other finds. Two floors of local art means you can spend forty-five minutes there without rushing.
- 11:30 a.m. to 1:00 p.m. — Lunch on Elm Street. Options within one block: Branded Burger, which occupies the restored original Cotton Exchange building and has a second-floor bar; Frenkie's Pasta and Pizza at 106 E Elm, run by Chef Mili Kabashi and his family with handmade recipes brought from Cogoleto and Varazze, Italy; or R&K Café II for a country plate lunch. Diaz Tex-Mex and Yaya's Place round out the Mexican bench downtown.
- 1:00 to 5:00 p.m. — The museum-and-antique circuit or the lake. Texas Through Time (fossils, free admission), the Roadside America Museum inside an old Ford dealership, and the Hillsboro Antique Mall are all within a five-minute walk. If the heat is winning, keep reading for the lake option.
- 8:00 to 11:00 p.m. — Free Summer Concert Series at The Yard. The summer concert series runs from May to September at the Hillsboro Truckyard downtown, just across from Wrangler's Cafe and Entertainment. It is free, outdoor, and it is the closest thing this town has to a standing weekly appointment for anyone under 60.
That is the Saturday. It uses roughly a quarter mile of pavement.
Weeknight anchors worth knowing
The square does not go dark Monday through Friday. It just runs quieter. If you live here, these are the standing weeknight items already on the calendar:

Sources for that table: the Hillsboro Chamber's events page, which lists Trivia Night in downtown Hillsboro at Branded Burger, weekly on Wednesday nights starting at 6:30 pm at 100 West Elm Street, plus story time and an activity with free play every Thursday at 10 a.m., in Spanish and English, and a weekly community Bible study at El Conquistador restaurant, noon each week on Thursdays.
For a nightcap after any of the above, Bearded Wheat Distillery, Ember Cigar Co, and Wrangler's Cafe & Entertainment sit in the same nightlife cluster on the square. Timber's Court is listed by the Chamber as coming soon.
When the heat wins, drive to the lake
Some Saturdays in July, the square is not the answer. Fifteen miles west on Highway 22 is Lake Whitney State Park, and if you have lived in Hill County for more than a season you already know it. Here is what has changed since your last visit and what has not.
The reservoir itself has not changed. Lake Whitney is 23,500 acres, with fishing from shore, pier, or boat. The park sits about an hour south of the DFW Metroplex on the eastern side of the lake, with seven camping loops hugging the shoreline, 135 campsites (43 with full hookups), 27 screened shelters, a group hall with kitchen, a small park store, three playgrounds, a picnic and swimming area, a boat ramp, and a fish cleaning area.
What is worth planning around: the office runs 8:30 a.m. to 4:30 p.m. and the gate is open 6 a.m. to 10 p.m. The park often reaches capacity, and reservations are recommended for both camping and day use. On a Saturday in July, showing up at 11 a.m. without a pass is a coin flip. Reserve the day-use pass online the night before.
And a July detail worth stating plainly: the July average temperature at the park is 85.9 degrees. Two Bridges Trail and the shoreline shelters are shaded; the swimming area is not. Plan accordingly.
If you would rather trade the state park for a rockier shoreline and fewer neighbors, the drive out to Meridian State Park via Highway 22 west is another 25 minutes and rarely full.

Two small facts that stitch it all together
Two data points to hold in your head as you plan the next six weeks.
First, the Chick-fil-A opening was newsworthy in Hill County for the same reason a new coffee shop matters here and does not matter in Fort Worth: Hillsboro's population was 8,221 in the 2020 U.S. Census. Every new storefront moves the needle on where residents spend their Saturdays. When Timber's Court opens on the square later this year, it will move the needle again.
Second, Hillsboro is not a destination town pretending to be a home town. It is a home town that happens to also work as a destination. The Chamber's own downtown map lists Bond Emporium at Overflow Coffee, Bargain Stop Thrift Shop, Brookshires Grocery, Bling's Baby Boutique, Crazy Horse Mercantile, Finished Seam's Boutique, 58th Shop, Gold Nugget Pawn Shop, Goldfinger Antiques, Hillsboro Mercantile, Hillsboro Arts League, Hillsboro Antique Mall, Mi Casita Envios, Poppin Tags Resale, Reflections Art Gallery, Texas Through Time Museum, The Boot Spot & Boutique, and Vintage Love Floral among the walkable shops on the square. That is the length of a mid-sized suburb's outdoor mall, packed into four blocks, and it is why the Saturday sequence above works.
The interstate side of Hillsboro is going to keep growing. The square is going to keep being the reason people stay.
